Before the Maison

Before the Maison, there was the source

The name came later. Our foundations formed years earlier, at the water’s edge, alongside producers whose understanding of sturgeon husbandry runs decades deep.

That proximity taught us to see caviar as something decided long before the tin: in the water that raises the fish, the feed it is given, the years it is allowed, and the moment it is finally taken. Each decision was refined long before the caviar is eventually served.

Maison Rocheval exists to hold that knowledge together. A deep respect for everything that happens before the harvest, and a clear conviction about what earns the right to carry the name.

The most extraordinary things cannot be accelerated

Selection begins upstream. Maison Rocheval works closely with its producers to understand every harvest: the conditions in which the sturgeon is raised, its diet, its maturity, and the timing of harvest.

The caviar is read as a whole.

Colour, grain, texture, firmness and moisture are judged alongside salinity, aroma, maturation and the integrity of each pearl.

On the palate, flavour unfolds in layers — walnut, seaweed, smoke, mushroom — with the truest character often arriving last, in the quality of the finish.

From Source to Ritual

Caviar has always carried ceremony: the chilled tin, the turn of the key, mother-of-pearl against the grain, the first spoonful taken before anyone speaks.
